Shiitake (Lentinula edodes) is an edible mushroom native to East Asia, where it has been cultivated and enjoyed for centuries.
Recognised for its distinctive brown cap and rich, savoury flavour, Shiitake naturally grows on hardwood and is widely used in Japanese and Chinese cuisine.
Shiitake contains naturally occurring polysaccharides, including a beta-glucan known as lentinan, alongside other fungal compounds such as sterols and polyphenols.
